Consider yourself forewarned: Once you've served these delicious puffs to your family and friends, you'll be bombarded with requests for more. Fortunately they are not too difficult to pull off, and you can spread out the preparation over a day or so before baking them off. You can even start the dough in the Thermomix while tackling the savory cod filling, so both are ready at about the same time. A pastry cutter makes fast work of cutting the dough into the squares.


  • 300 grams flour
  • 130 grams butter
  • 70 grams water
  • 1/2 teaspoon salt
  • 1/2 tablespoon sugar
  • 800 grams water
  • 200 grams codfish (soaked and shredded)
  • 50 grams oil
  • 10 grams parsley
  • 50 grams onion
  • 50 grams roasted peppers (canned)
  • 1 garlic clove
  • 40 grams flour
  • 1 gram butter


  1. Place first 5 ingredients in the order given into the Thermomix cup and set to 15 seconds/6 speed. Set dough aside.
  2. Place the 800 grams of water, cod and 10 grams of olive oil in the Thermomix basket and set to 15 minutes/100°C/4 speed.
  3. Remove the basket using a spatula and separate the water from the cod. Set the cooking water aside.
  4. In the clean glass, place the cod and shred for 4 seconds/reverse spoon/4 speed.
  5. Remove and set aside.
  6. Place the parsley in the cup and chop for 2 seconds/7 speed.
  7. Remove and set aside.
  8. Place the onion, garlic, peppers and 40 grams of olive oil in the cup.
  9. Mince for 5 seconds/5 speed.
  10. Next, sauté for 3 minutes/Varoma/1 speed.
  11. Add the reserved parsley and cod and set for 1.5 minutes/Varoma/1 speed.
  12. Remove and set aside.
  13. Pour 200 grams of the reserved cooking water in the cup, add flour, butter and salt and set for 6 minutes/194°F/level 4.
  14. Add the cod, folding in using a spatula. Let cool.
  15. On a floured surface, roll the dough thinly.
  16. Using a dough cutter, cut the dough into squares approximately 4 to 5 centimeters.
  17. Place a spoon of the filling in the center of a square, moisten the edges and place another square on top. Seal edges using the tip of a fork.
  18. Repeat the process until all the dough and filling are used.
  19. Brush each cushion with the whisked egg and place in a preheated oven for about 10-15 minutes or until golden brown.
  20. Serve hot or cold.
