1Place first 5 ingredients in the order given into the Thermomix cup and set to 15 seconds/6 speed. Set dough aside.
2Place the 800 grams of water, cod and 10 grams of olive oil in the Thermomix basket and set to 15 minutes/100°C/4 speed.
3Remove the basket using a spatula and separate the water from the cod. Set the cooking water aside.
4In the clean glass, place the cod and shred for 4 seconds/reverse spoon/4 speed.
5Remove and set aside.
6Place the parsley in the cup and chop for 2 seconds/7 speed.
7Remove and set aside.
8Place the onion, garlic, peppers and 40 grams of olive oil in the cup.
9Mince for 5 seconds/5 speed.
10Next, sauté for 3 minutes/Varoma/1 speed.
11Add the reserved parsley and cod and set for 1.5 minutes/Varoma/1 speed.
12Remove and set aside.
13Pour 200 grams of the reserved cooking water in the cup, add flour, butter and salt and set for 6 minutes/194°F/level 4.
14Add the cod, folding in using a spatula. Let cool.
15On a floured surface, roll the dough thinly.
16Using a dough cutter, cut the dough into squares approximately 4 to 5 centimeters.
17Place a spoon of the filling in the center of a square, moisten the edges and place another square on top. Seal edges using the tip of a fork.
18Repeat the process until all the dough and filling are used.
19Brush each cushion with the whisked egg and place in a preheated oven for about 10-15 minutes or until golden brown.
20Serve hot or cold.
