Cod and potatoes are often cooked together in Portuguese style (and other regional) dishes. Here, the two ingredients are also combined with zucchini to make savory fritters that are bound with egg yolks and seasoned with garlic, onion, and parsley and then fried to golden brown perfection. You'll need to boil the potatoes and zucchini and then puree before getting started. Serve them as bite sized nibbles at a cocktail party, or with rice as a main course.
- 1 chopped onion
- 1 tablespoon olive oil
- 3 potatoes
- 1 zucchini
- 500 grams codfish (boiled and shredded)
- 2 cloves garlic
- 1 egg (and 1 egg yolk)
- 1 bunch parsley
- In a frying pan, saute the chopped onion with the olive oil.
- In a bowl, place the potato-zucchini puree, shredded cod, egg yolks, finely chopped garlic, salt, pepper, onion and chopped parsley. Stir to combine. Using two spoons, form small balls. Fry in very hot cooking oil until golden brown.
- Serve with tomato rice.
