Ingredients

  • 3 cups vegetable stock
  • 1 leek (medium, trimmed and sliced into thin rings)
  • 1/2 teaspoon red chili flakes
  • 1 pound skinless cod fillet (cut into chunks)
  • 2 bunches mustard (and/or watercress, roughly chopped)
  • 1 teaspoon lemon juice

Directions

  1. Bring the stock to a boil. Add the leeks and simmer for 5 mins. Add the chili flakes and cod, cover and simmer for about 5 mins until the cod is just cooked. Add the greens and lemon juice. Season to taste and serve in warmed bowls.
