Ingredients

  • 50 milliliters olive oil
  • 1 onions (chopped)
  • 1 garlic cloves (minced)
  • 1/2 can diced tomatoes
  • 1 bay leaf
  • 1 red pepper (chopped and seedless)
  • 700 milliliters water
  • 250 grams pasta (thick macaroni)
  • 2 slices unsalted cod (cut in bite-size pieces)
  • salt (to taste)
  • 1 parsley sprigs (chopped)

Directions

  1. Heat olive oil in a large saucepan over medium heat.
  2. Add onion and garlic and cook for a few minutes.
  3. Add the tomatoes and bay leaf.
  4. Add the red pepper and cook briefly.
  5. Add water and bring to a boil, then add pasta.
  6. Stir well.
  7. Simmer for 5 minutes and add cod.
  8. Season with a pinch of salt and continue to simmer until pasta is tender.
  9. To serve, sprinkle with chopped parsley.
