This tasty Cod Dip makes a great appetizer when served with crackers or on lightly toasted bread. Featuring flaky cod and creamy mashed potatoes, this dip is smooth and rich in flavor. This recipe seasons the dip with a bit of ground black pepper, but you can also experiment with your favorite herbs and spices to achieve the dip of your dreams. Best served warm, this cod dip can also be spread on slices of toasted bread and broiled until golden brown.

Ingredients

  • vegetable oil
  • 200 grams cod
  • milk
  • 1 potato
  • ground black pepper
  • 8 slices bread

Directions

  1. In a skillet, add enough oil to cover the cod. Cook on low heat for about 5 minutes.
  2. Remove the fish, reserving the oil. Crumble the fish well into a bowl and set aside.
  3. In a pot filled with salted water, add the potato and boil for about 15 minutes. Drain the potato, place into a bowl and mash.
  4. Whisk together the cod with the potato with a few drops of milk.
  5. Add a tablespoon of oil and mix well. Add a few more drops of milk and mix well. Continue to add oil and milk until you achieve a creamy consistency. Season with black pepper to taste.
  6. Toast the bread and spread the dip on top. Place under a broiler until the tops are golden brown.

I wasn't sure about this recipe based on the title alone but the picture caught my eye. It looked like a delicious dish so I tried it. I am glad that I did as it was really good. Takes a little time to make but well worth it!
