This savory cod casserole combines creamy mashed potatoes and flaky cod into one hearty main entree that will satisfy every hungry mouth at your table. Seasoned with garlic, parsley, and covered in melty cheese, with this cod casserole you are one step closer to a perfect night. Serve with steamed vegetables or a fresh garden salad.

Ingredients

  • 600 grams potatoes
  • salt
  • 1/2 cup olive oil
  • 400 grams cod (unsalted, flaked)
  • 1 handful parsley (diced)
  • 2 garlic cloves (diced)
  • 10 milliliters heavy cream
  • cheese (Emmental, grated)
  • ground black pepper

Directions

  1. 1Boil the potatoes with very little salt until soft. Drain and mash. Set aside.
  2. 2Preheat the oven to 200 degrees Celsius.
  3. 3Set a heavy-bottomed pot on low heat, then add a drizzle of oil and the cod, parsley, and garlic. While constantly stirring, stream in the rest of the olive oil, pressing the cod along the sides of the pot so it breaks apart even more.
  4. 4When a paste has formed, remove from heat and stir in the cream and mashed potatoes.
  5. 5Add to an oven-safe dish, sprinkle with the cheese and ground black pepper, and bake until golden.
