Description

Cutting up a whole chicken yourself is a much more economical way to go than buying the separated pieces, and simple enough to do. Here, the chicken is cut into pieces and browned in a little butter, and then combined with sauteed bacon and shallots, saffron, and toasted almonds and cooked until tender through and through and deeply flavorful. A simple salad and cooked rice rounds out the meal nicely.

Ingredients

  • 1 chicken (countryside)
  • 12 spring onions
  • 4 slices bacon
  • 1 cup toasted almonds
  • 1 teaspoon saffron
  • salt
  • pepper
  • 1 tablespoon butter

Directions

  1. Clean and cut the chicken into pieces and place it in a saucepan with the butter to brown a little. Cover and leave to cook.
  2. Cut the bacon into squares and sauté in a frying pan. Add to the chicken.
  3. Also sauté the shallots in a little olive oil and add to the chicken. Season with salt, pepper and saffron. Add the almonds and cook for 20 minutes over low heat, stirring occasionally.
  4. Serve with white rice and green salad.
