Coconut, Almond, and Chocolate Bites

Description

Essentially a deconstructed Almond Joy, these coconut, almond, and chocolate bites are gluten free and make a tasty gift or fun dessert. Arrange in glass jars or in clear cellophane bags if going the gift route.

Ingredients

US|METRIC
  • 140 grams coconut (unsweetened, shredded)
  • 90 grams sugar
  • 2 egg whites
  • almonds
  • 20 grams dark chocolate

Directions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Mix the coconut and the sugar.
  3. Add the egg whites and mix well.
  4. Spoon out 1/4 teaspoon coconut bites onto a baking pan lined with parchment paper.
  5. Flatten them slightly and form a cross on the top by pressing them lightly between the thumb and forefinger on each side. Gently push some almonds inside the bites, they should remain visible.
  6. Bake for 13 -14 minutes. Watch regularly to avoid burning the bottom.
  7. If they cook too fast, place a second baking pan below the pan with the bites
  8. Once cooked, cool on a biscuit grill.
  9. Melt the chocolate in a small saucepan, and dip the bottom of the bites in the chocolate. Place on a plate bottom side up to dry.

These sweet and chewy bites went together fast. I added a bit of finely chopped and drained maraschino cherries to the coconut mixture and baked for 10-12 minutes to retain their chewiness.
