Ingredients

  • 0oil (for frying)
  • 1/2 cup flour
  • 2 teaspoons curry powder
  • 2 cups coconut (shredded)
  • 0salt (and pepper to taste)
  • 1 pound shrimp (cleaned)
  • 2 eggs (beaten)

Directions

  1. Preheat oil in skillet or wok on medium heat to 350 degrees.
  2. Mix flour, curry, coconut, salt and pepper.
  3. Dip shrimp in egg mixture then roll in flour mixture. Repeat.
  4. Cook about 3 minutes on each side or until golden brown.

I have been making coconut shrimp for years and this is the best recipe by far. I substituted coconut flour for regular flour. Excellent recipe.
