Combining the taste and texture of coconut with the citrusy sweetness of orange, this coconut and orange pie is perfect for summertime. Make your own puff pastry or purchase it premade.

Ingredients

  • 1 puff pastry (round base)
  • 4 eggs
  • 180 grams sugar
  • 200 grams coconut (grated)
  • 1 orange juice (and zest)
  • 0.5 liters milk

Directions

  1. Preheat oven to 180. degrees Celsius
  2. Spread the pastry dough in a pie pan lined with parchment paper, and prick the bottom with a fork.
  3. Whisk the eggs with an electric mixer.
  4. Add sugar, coconut, orange juice and zest, and mix well.
  5. Add the milk, and beat until well mixed.
  6. Pour into pie pan, and bake about 35 minutes, or until the top is browned.
  7. Check for doneness, remove from oven, let cool slightly, and unmold.

We have a passion for clams at our house and beans are a long time family tradition. Marrying the two seemed natural! The only changes I made to the recipe were to add some spring herbs such as tarragon and chives and doubled the garlic. Other than that, this recipe needed only a spoon!
