Description

Combining the taste and texture of coconut with the citrusy sweetness of orange, this coconut and orange pie is perfect for summertime. Make your own puff pastry or purchase it premade.

Ingredients

1 puff pastry (round base)
4 eggs
180 grams sugar
200 grams coconut (grated)
1 orange juice (and zest)
1/2 liter milk

Directions

1Preheat oven to 180. degrees Celsius
2Spread the pastry dough in a pie pan lined with parchment paper, and prick the bottom with a fork.
3Whisk the eggs with an electric mixer.
4Add sugar, coconut, orange juice and zest, and mix well.
5Add the milk, and beat until well mixed.
6Pour into pie pan, and bake about 35 minutes, or until the top is browned.
7Check for doneness, remove from oven, let cool slightly, and unmold.
