Description

Moist and soft with an aromatic flavor, this coconut and orange cake makes a great summertime dessert or brunch cake. Made with no butter, this cake elects for vegetable oil in addition to coconut flavored yogurt for additional flavor.

Ingredients

  • 5 eggs
  • 150 grams yogurt (coconut flavored)
  • 150 milliliters vegetable oil
  • 350 grams sugar
  • 1 orange zest (and juice)
  • 100 grams grated coconut
  • 180 grams flour
  • 1 teaspoon baking powder

Directions

  1. 1Preheat oven to 180 degrees Celsius.
  2. 2Grease a high-sided pan with margarine, and sprinkle with flour. Set aside.
  3. 3In a bowl, mix all the ingredients except flour and baking powder.
  4. 4Mix well until dough is homogeneous, smooth, and bubbling.
  5. 5Then, add the flour and the baking powder, and beat at a low speed just until everything is combined.
  6. 6Place in the mold, and bake for about 45 minutes.
  7. 7Check the cooking, remove from oven, and unmold.
