Description

Made with no flour, this delicious coconut and oatmeal cake is easily gluten free. Flavored with cinnamon and coconut, this cake has a beautifully warm flavor making it the ideal accompaniment to a cup of coffee or tea. Fluffy and moist, this gluten free cake is a winner.

Ingredients

  • 1 can condensed milk
  • 4 eggs
  • 50 grams grated coconut
  • 80 grams oats
  • 1 teaspoon cinnamon
  • 1 tablespoon baking powder
  • powdered sugar (for dusting)

Directions

  1. 1Preheat oven to 180 degrees Celsius.
  2. 2Grease muffin tray with butter, and sprinkle with flour.
  3. 3In a bowl combine the condensed milk with the eggs and beat well.
  4. 4Add the grated coconut, the oatmeal, cinnamon, baking powder, and mix again.
  5. 5Pour the batter in a baking pan, and bake for 25 to 30 minutes.
  6. 6Check the cooking with a toothpick.
  7. 7Remove from the oven, unmold, and cool.
  8. 8When cool, sprinkle with powdered sugar.
