Gluten free and made with no butter, these biscuits will become a new favorite. Made with oats, egg whites, and grated coconut, these biscuits are light and sweet, crunchy, and just the right amount of chewy.

Ingredients

  • 3 eggwhites
  • 1 pinch salt
  • 150 grams sugar
  • 100 grams grated coconut
  • 150 grams oatmeal

Directions

  1. Place the eggwhites in a bowl, add a pinch of salt, and beat until the whites begin to peak.
  2. In another bowl, add the sugar, coconut, and oatmeal and mix well.
  3. Add the whipped eggwhites and mix them in gently from the bottom up.
  4. Place small spoonfuls of the dough on a baking tray lined with non-stick baking paper.
  5. Cook for about 20 minutes. Remove the tray and let the cookies rest until they are slightly warm.
  6. Remove the cookies to a wire rack and let them cool completely before storing them in an airtight box.

Interesting recipe for biscuits/cookies. I've never thought to use coconut and oats together, but love both. They have a unique texture – they are crunchy and have a little bit of chewiness in them as well, but taste really good. Will make these again when I'm looking for something other than the normal oatmeal cookies.
