Description

Gluten free and made with no butter, these biscuits will become a new favorite. Made with oats, egg whites, and grated coconut, these biscuits are light and sweet, crunchy, and just the right amount of chewy.

Ingredients

3 eggwhites
1 pinch salt
150 grams sugar
100 grams grated coconut
150 grams oatmeal

Directions

1Place the eggwhites in a bowl, add a pinch of salt, and beat until the whites begin to peak.
2In another bowl, add the sugar, coconut, and oatmeal and mix well.
3Add the whipped eggwhites and mix them in gently from the bottom up.
4Place small spoonfuls of the dough on a baking tray lined with non-stick baking paper.
5Cook for about 20 minutes. Remove the tray and let the cookies rest until they are slightly warm.
6Remove the cookies to a wire rack and let them cool completely before storing them in an airtight box.
