Ingredients

100 grams grated coconut
100 grams sugar
180 grams margarine
1 eggs
salt
250 grams flour
2 teaspoons baking powder
2 teaspoons ginger (grated)

Directions

1Preheat oven to 200 degrees Celsius.
2Beat all the ingredients together, and form a moldable and buttery dough.
3Spread out the dough, and cut out the cookies.
4Place cookies on baking tray lined with a silicone mat, or parchment paper.
5Bake at 200 C for a few minutes, until golden.
