These tasty coconut treats are dairy free and gluten free. Simple and easy to make these are great to make with kids and they will love the fresh coconut flavor. Add your favorite spices for extra flavor.

Ingredients

  • 200 grams grated coconut
  • 250 grams sugar
  • 2 eggs
  • 2 egg yolks

Directions

  1. Preheat oven to 180 degrees Celsius.
  2. Prepare small paper cups (about 30).
  3. Mix all the ingredients in a large bowl. Stir with a spoon, but if necessary, mix with your hands.
  4. Use a dessert spoon make small balls, coat them in sugar, and place them in the paper cups.
  5. Bake for about 20 minutes.

These are absolutely delicious. They are also quick and easy to make, which makes them the perfect little snack food. I only did about 150 grams of coconut in the ones I made. I didn't want the consistency of the grated coconut to be overpowering. They turned out great and it wasn't too much. The 200 grams would probably do well, too. I'll have to try it that way next time and see how it goes. I guess it just depends on personal preference.
