Ingredients

  • 13 1/2 ounces coconut cream
  • 1 lemon (zested and juiced)
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 2 teaspoons sambal oelek
  • 1 clove garlic (minced)
  • 20 ounces white fish fillets (firm)
  • 2 ounces baby spinach
  • steamed rice (to serve)
  • green onion (shredded, to serve)
  • red chili (sliced, to serve)

Directions

  1. In a medium saucepan, bring coconut cream, lemon zest, lemon juice, fish sauce, brown sugar, sambal oelek and garlic to a boil, stirring often. Reduce heat to low and add fish fillets. Simmer gently, covered, for 8-10 mins, until fish flakes easily when tested with fork.
  2. Remove fish and stir in spinach. Serve fish and spinach with rice. Sprinkle with shredded green onion and chili.
