Ingredients

  • 2/3 cup condensed milk
  • 1 egg white
  • 1 1/2 teaspoons vanilla
  • 1 pinch salt
  • 3 1/2 cups shredded coconut (completely dry)

Directions

  1. Preheat the oven to 160C.
  2. Mix the egg white, milk, vanilla, and salt together in a bowl.
  3. Add the coconut and mix all of the ingredients together until the coconut is completely soaked.
  4. Cover a baking tray with cooking spray or parchment paper so that the macaroons do not stick.
  5. Drop tablespoons of the coconut mixture on the baking tray, about 2 inches apart from each other.
  6. Bake the macaroons for 20–30 minutes or until the outside layers become a light golden color.
  7. Take the tray out of the oven and let the macaroons cool for 10 minutes before serving.

I have always loved coconut macaroons and now that I have found this recipe, I will never buy them from the store again. These are some of the most richly flavored and tasteful macaroons I have ever eaten. I have made 5 batches of this recipe and cannot seem to keep them in the house for more than a day before they have been devoured by anyone who comes over. I will definitely make this 5 star recipe again.
