Description
Dhal is a traditional Indian dish that typically include lentils, peas, or beans. This recipe for coconut dhal calls for lentils, you decide what kind. Made with coconut milk, this dhal is rich and creamy in texture. Turmeric adds the expected Indian flavor and green chilies add a bit of spice. This recipe calls for chicken stock, however vegetable stock can be substituted to make this recipe vegetarian and vegan friendly.

- 250 grams lentils
- 400 mL coconut milk
- fresh curry leaves (or dried)
- 1 tomato (large, chopped)
- 1 onion (chopped)
- 1 tsp. turmeric
- 2 green chili peppers (optional)
- 500 mL chicken stock
- fresh coriander (or curry leaves to garnish, optional)

Directions
- If using dried curry leaves, place in boiling water for 2–3 minutes. Once rehydrated, dry the leaves and set aside.
- In a heavy based pan, place the lentils, coconut milk, 2 curry leaves, onion, tomato, and turmeric.
- Cover with 300 milliliters of stock and bring to the boil.
