This Coconut Curry with Shrimp is a perfect combination of all these flavors. It includes onions, garlic, green chilies, curry powder, shrimp, coconut milk, lime juice, grated coconut, salt, ground black pepper and chopped coriander. Serve it over your favorite rice. All these ingredients pack a powerful punch to the palate.

Ingredients

  • 1 tablespoon olive oil
  • 1 onions (small, chopped)
  • 1 garlic cloves (minced)
  • 1/2 green chilies (seeded and shredded)
  • 1 teaspoon curry powder
  • 400 grams prawns (or shrimp)
  • 400 milliliters coconut milk
  • 3 lime juice
  • 1 tablespoon grated coconut
  • salt (to taste)
  • ground black pepper (to taste)
  • 1 sprig coriander (chopped)

Directions

  1. In a large pot, heat the oil.
  2. Add onion and minced garlic, saute for a few minutes.
  3. Add chili and curry powder, continue cooking for a few minutes over low heat.
  4. Add the prawns or shrimp, cover with coconut milk.
  5. Cook for about 10 minutes.
  6. Add lime juice and coconut, stirring constantly.
  7. Season with salt and pepper, remove from heat.
  8. To serve, sprinkle with chopped coriander. Accompany with basmati rice.
