I had no curry paste. I marinated the mushrooms and added zucchini and tofu. I also had no onions so I used leeks instead, I cooked the marinated items for a good while, along with lots of green curry powder, lemon grass, garlic powder, coriander and red pepper flakes, until they were cooked through and starting to brown. Meanwhile I combined my stock and coconut milk and combined them over a very low heat. I added my leeks about halfway through, and after I was satisfied with the done-ness I added my stock and coconut milk and simmered for a couple minutes. I served over rice noodles and topped with two barely cooked over easy eggs. I think if I had cilantro and lemon it would have really finished this off beautifully, but I made do with what was on hand and was amazing!!
