Easy four ingredient cookies that are ready in less than an hour. These delicious coconut cookies are simple to make, taste superb, and are gluten free.

Ingredients

  • 5 egg whites
  • salt
  • 200 grams powdered sugar
  • 250 grams grated coconut

Directions

  1. Preheat oven to 180 degrees Celsius.
  2. Place the egg whites in a bowl with a pinch of salt, and beat until firm.
  3. Gradually, add the powdered sugar until the egg whites form stiff peaks.
  4. Gently mix in spoonfuls of coconut, beating upwards.
  5. Line a baking tray with parchment paper, or other non-stick material.
  6. Put spoonfuls of dough on the tray.
  7. Bake for about 20 minutes, or until golden.
  8. Remove from oven, and let cool.

These cookies really couldn't be any easier to make. They have great coconut taste with a nice texture. They have a nice sweet taste that goes down smooth. If you love coconut, give these a try. Tastes great with a glass of chocolate milk!
