Ingredients

  • 230 grams butter
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 1 egg
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 2 1/2 cups flour
  • 1 cup coconut (grated, may be toasted)

Directions

  1. Preheat the oven to 180 degrees Celsius.
  2. Cream the butter and add the sugar and salt. Mix well.
  3. Add the egg, egg yolk, and vanilla and mix thoroughly.
  4. Add the flour and coconut.
  5. Shape the dough into balls and place on baking trays leaving a 2-centimeter space between the cookies.
  6. Bake for 12 minutes or until the edges are golden brown.
  7. Remove from the oven and let them cool to serve.

Coconut and cookies are two of my favorite things. However, I felt that this recipe was a bit bland. By itself the coconut just seemed to be missing the chocolate to make it spectacular. They have a good flavor, but for me it just seems like it's lacking. The second time I made them I dipped them in chocolate and it was perfect.
