Cocoa powder and sweetened shredded coconut (also known as angel flake coconut) give these cookies incredible flavor that's reminiscent of a favorite candy bar. Creaming the butter and sugar sufficiently will ensure the cookies are chewy; after that be sure to mix in the other ingredients until well combined. This recipe makes generous-sized cookies, but you can form smaller ones as desired, and bake them for a bit less time.

Ingredients

  • 100 grams butter (softened)
  • 100 grams sugar
  • 1 egg
  • 150 grams cake flour (sieved)
  • 1/2 teaspoon baking powder
  • 20 grams cocoa powder
  • 2 tablespoons coconut flakes

Directions

  1. Preheat the oven to 180 degrees Celsius.
  2. In a bowl, cream the sugar and butter.
  3. Add the egg, flour, and baking powder and mix well.
  4. Add the cocoa powder and the coconut and knead until a dough forms.
  5. Form the dough into balls the size of golf balls and place on a lined baking sheet.
  6. Bake for up to 12 minutes.
  7. Allow to cool completely before removing from the baking sheet.
