it turned out ok, we enjoyed it but not as much as other coconut curry recipes I've used in the past

Excellent! I made it on the stove top and let it simmer for 45 min to an hour and added the corn starch at the end and brought to a boil. Boiled for 2-3 min which was enough to thicken, removed from head and sprinkled the coconut on top. Browned the chicken in butter before adding the rest of the ingredients. I also used chicken thighs instead of breast. Will definitely make again!
