  • 1/4 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper (or to taste)
  • 1/4 teaspoon cracked black pepper (freshly, or to taste)
  • 1 1/2 teaspoons kosher salt
  • 2 medium tomatoes (chopped)
  • 1/2 cup chicken stock
  • 2 pounds boneless chicken (cut into 1 1/2 inch pieces)
  • 1/2 cup unsweetened coconut milk
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/3 cup chopped cilantro (for garnish, optional)

    Directions

    1. In a dutch oven or enameled cast-iron casserole dish, heat oil.
    2. Add onion and cook until nicely browned around the edges, about 7 minutes.
