Ingredients

  • 4 eggs
  • 200 grams sugar
  • 100 grams margarine (softened)
  • 1 yogurt (containercoconut)
  • 50 grams grated coconut
  • 1 apple (cubed or finely chopped)
  • 1 orange (small, juiced)
  • 180 grams flour
  • 1 teaspoon baking powder

Directions

  1. Start by beating the eggs well and mixing in the sugar.
  2. Then, add the margarine and the yogurt and beat well again.
  3. Add the coconut, apple, and orange juice.
  4. Finally, mix in the flour and baking powder.
  5. Put the dough in a round, greased, and floured baking tray and bake for about 40 minutes.
  6. Check to see that it is done, remove from the oven, and then remove from the baking tray.

Nice and fruity cake. It's really easy to make and tastes like something you can buy at a bakery. It has a nice color and comes out moist. The sweet/sour balance between the fruits is fantastic. We topped this with some icing to really make it sweet.
