These coconut and almond candy crumbs make a tasty topping for ice cream, cakes, cupcakes, or anything else you might imagine. Sweet and salty, these candy crumbs are also gluten free.

Ingredients

  • 6 eggs
  • 240 grams sugar
  • 100 grams grated coconut
  • 1/2 cup milk
  • 75 grams almonds (laminated)
  • 2 tablespoons milk
  • 2 tablespoons sugar

Directions

  1. Whisk the eggs well.
  2. Place the eggs in a saucepan with the sugar, and bring to simmer, stirring constantly with the whisk, so as not to create lumps. When it begins to thicken, add the coconut little by little, stirring constantly, alternating with the milk. When everything is mixed, remove from heat, and pour on a platter.
  3. In a frying pan, add the almonds, milk, and sugar. Cook on a very low heat, and stir sparingly until the almonds begin to brown.
  4. Remove from heat, and immediately place on top of the eggs with coconut.
  5. Allow to cool, and serve.
