Description

This version of the classic French dessert strays from the traditional vanilla custard filling. Chocolate and pears are the perfect combination in this simple dessert. A chocolate custard is studded with pears and then sandwiched between two layers of crisp puff pastry for a perfectly balanced dish. Almond flour adds a bit of nuttiness to the filling, which complements the chocolate and pears.

Ingredients

2 puff pastry sheets
custard (amounts halved)
30 grams sugar
100 grams almonds (powderr)
70 grams butter (soft, cut into pieces)
1 tablespoon flour
2 tablespoons cocoa powder
2 eggs
1 egg yolks
1/2 pears (in syrup, diced)

Directions

1Preheat oven to 425 degrees Fahrenheit.
2Prepare the pastry cream as shown here. Reserve in the refrigerator.
3In a bowl, mix the almond powder, flour, sugar, and cocoa; then the butter and eggs with a spoon. Add custard to preparation.
4Place a puff pastry on a baking tray lined with baking paper. Pour the mixture onto the pastry making sure to leave a border of about 3 cm. Slightly wet the rim. Cover with the second puff pastry and press the edges of the two layers together. If necessary, cut off excess dough. Brush the wafer with the egg yolk diluted in a little bit of water. Slit the pastry slightly without piercing, and bake for 25-30 minutes.
