Description

Taking some cues from legendary Italian panettone, this richly flavored chocolate bread incorporates dried fruit, candied citrus zest and pine nuts, as well as all-purpose and strong flour, which is favored for its high gluten content. The recipe calls for a bread machine, though you can also bake it in a loaf pan, too. Let it cool before slicing and serving.

Ingredients

  • 250 milliliters low-fat milk
  • 200 grams strong flour
  • 250 grams all-purpose flour
  • 80 grams cocoa (sweet, powdered)
  • 1 eggs
  • 40 grams butter (melted)
  • 1 teaspoon salt
  • 4 tablespoons sugar
  • 1 packet dry yeast (or 150 gr. yeast starter)

Directions

  1. 1Place the milk, strong flour, all purpose flour, cocoa, egg, butter, salt, sugar, and yeast in the bread machine bowl. It is also possible to knead the ingredients by hand or with a mixer for approximately 10 minutes and then let rise until the dough doubles in size.
  2. 2Set the bread machine to the kneading function.
  3. 3Add the chocolate chips.
  4. 4When the cocoa bread is done, let it cool completely. Or if not using a bread machine bake the bread for approximately 40 minutes at 190 degrees Celsius and let cool.
