I loved how easy this recipe was to put together - using pre-made puff pastry was much quicker than making my own pie crust and gave the quiche a delicious light texture. I sliced up red onions to give the quiche some color, cut back on the cottage cheese to 1/2 a cup, and also added some asparagus tips and mushrooms to bulk the mixture out with vegetables. This quiche would be perfect for a picnic or a summer barbecue.
