I ended up with waay more than 4 servings. Also, didn't use the slow cooker. I roasted my own small chicken, and added it to the other ingredients. I added the corn and salsa last. Yummmmm!

Tasty! Converted to oven because I was short on time. Also had to use canned corn. Had great color and texture.

Big hit in our household. Had over baked potato's with homemade Guacamole and Sour Cream, and over rice with Cilantro. Added a little more of the spices to bring out more flavour and it worked out really well!

The chicken took longer to cook than I expected and i felt like it needed more flavor overall. I will try again but not sure how to improve it. I like that it was simple to make.

It definitely tastes clean and fresh. I ended up using the leftovers as enchilada filling. I'll make this again.
