Description
Fresh sage and drippings from a just-roasted bird make this the gravy everyone wants to pour over their Thanksgiving turkey and mashed potatoes. The recipe is a Yummly original created by David Bonom.

- 1 qt. turkey drippings (from a roasted turkey)
- unsalted chicken broth (if needed)
- 2 shallots (medium)
- 5 Tbsp. turkey fat (or unsalted butter)
- 1 Tbsp. fresh sage (chopped)
- 5 Tbsp. all purpose flour
- 1/2 tsp. salt (or more to taste)
- 1/4 tsp. black pepper (or more to taste)

Directions
- Spoon the fat from turkey drippings and set aside 5 tablespoons in a small bowl (discard the remaining fat). Measure the defatted turkey drippings and if needed, add enough chicken broth to equal 3 1/2 cups.
- Finely chop the shallots.
- Heat the reserved turkey fat in a large saucepan over medium heat. Add the shallots and sage and cook, stirring occasionally, until slightly softened, 2-3 minutes. Reduce the heat if shallots start to brown.
