Ingredients

  • 1 tablespoon sunflower oil
  • 1 onion (peeled and cut into strips)
  • 2 cinnamon sticks
  • 3 1/3 pounds red cabbage (cut into wedges)
  • 1 cup dry red wine
  • 1 cup vegetable stock
  • 4 tablespoons red currant jelly
  • 2/3 cup gingerbread cookies (crushed)
  • 1 apple (cored and diced)

Directions

  1. Heat the oil in a pan and sauté the onion until translucent, stirring occasionally. Add the cinnamon sticks and red cabbage, sauté briefly then pour in the red wine and vegetable stock. Bring to a boil. Season to taste then add the red currant jelly. Cover and simmer for about 30 mins. Add the crushed gingerbread cookies along with the apple and simmer for another 10 mins.
