  • 4 tablespoons unsalted butter
  • 4 tablespoons canola oil
  • 3 vidalia (extra-large, or sweet onions, quartered and sliced thinly)
  • 2 white onions (extra-large, quartered and sliced thinly)
  • 1 tablespoon sugar
  • salt
  • black pepper
  • 2 cloves garlic (pressed through garlic press)
  • 1 tablespoon fresh thyme leaves
  • 2 bay leaves (dried is what I used)
  • 1 cup sherry (dry, not sweet)
  • 8 cups beef stock
  • 1 slice French baguette (toasted, about 8-12 slices, depending on the size and the serving amount)
  • 2 cups shredded Gruyere cheese
  • thyme leaves (for garnish)

    Really sweet the first day of eating it but the next day was a little better, Next time not going to be adding any sugar

    use dry white wine instead of sherry and no sugar, it won't be sweet

    I haven't made the soup yet but right off the top I can tell you, if it was too sweet, eliminate the 1T of sugar. Onions have natural sugar in them which adds enough for a savory dish like onion soup.

    Maybe I did something wrong, but I didn't care for this soup. It was way too sweet!

    Amazing! Not too rich or sweet, just right! I replaced the sherry with more beef stoke. We will defiantly be making the soup again!

    This was, hands down, one of the best meals I've ever made. Recipe took 90 minutes, not 35 as stated
