This is the BEST egg salad I have ever made. The red onion was a touch stronger than I liked and I will try using 1 TBS next time. The parsley gave it a fresh flavor and the celery gave it a nice crunch so I might use a little more in the next batch. Also, it is so delicious that next time I will make a double batch!
