  • 1 onion (medium)
  • 1 large carrot
  • 2 celery stalks
  • 1 pound ground beef
  • 1 tablespoon extra virgin olive oil
  • 1 can crushed tomatoes (28 oz. per can)
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 bay leaf
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 can kidney beans (or black beans, 15.5 oz. per can, drained and rinsed)
  • 1/4 cup jarred jalapeno chilies (chopped)
  • 1 cup chicken broth (if needed)
  • 1 cup tomatoes
  • 1/2 cup onion (red or yellow)
  • 1/2 cup cilantro sprigs
  • 1/2 cup sour cream
  • 1 cup shredded Mexican cheese blend (or cheddar cheese)

    Directions

    1. Chop onion, carrot, and celery; set them aside.
    2. Brown meat in a large pot or Dutch oven over medium heat, stirring frequently to break it up into crumbles, until no pink remains, about 5 minutes. Turn meat into a colander set over a plate to drain excess fat.
    3. Return pot to medium heat and add oil. When oil is hot, add onions, carrots, and celery; cook, stirring often, until vegetables start to soften, about 10 minutes.
