Clafouti with Zucchini, Raw Ham, Feta and Pine Nuts

  • 2 zucchini
  • 1 tablespoon olive oil
  • salt (to taste)
  • 4 eggs
  • 75 grams flour
  • cream (50 cl. liquid)
  • 100 grams grated parmesan cheese
  • 80 grams ham (cut into strips)
  • 100 grams feta cheese
  • 20 grams pinenuts
  • pepper (to taste)


  1. 1Preheat the oven to 350F.
  2. 2Slice the zucchini into thin strips lenghwise.
  3. 3Heat the olive oil in a pan and fry the zucchini for 4 to 5 minutes. Season with salt.
  4. 4In a bowl, beat the eggs, gradually adding the flour and cream until smooth.
  5. 5If you have lumps, use a blender to break them up.
  6. 6Add the grated parmesan.
  7. 7In an ovenproof dish, place the ham, chunks of feta cheese, zucchini strips, and egg mixture.
  8. 8Sprinkle the top with pine nuts and then pepper (do not add more salt because the Parmesan cheese and ham are already salted).
  9. 9Cook for 25 minutes.
  10. 10Serve hot.
