While this recipe may look complicated it was actually quite simple to make because I used ingredients that I tend to have on hand.

Ingredients

  • 3/4 cup cooked quinoa (Try frozen)
  • 1/2 cup coconut milk
  • 1/4 teaspoon orange zest
  • 1 pinch cinnamon
  • 1 pinch cardamom
  • 1 teaspoon maple syrup
  • 2 tablespoons frozen raspberries (defrosted)
  • 1 tablespoon almonds

    Directions

    1. In sauce pan, heat the quinoa, coconut milk, orange zest, spices and maple until warm.
    2. Top with raspberries and almonds.
