Sweetened with agave syrup, these Cinnamon Rye Muffins are sugar free. Made with a blend of rye and whole wheat flour, these cinnamon spiced muffins have a rich, dense crumb. These healthy Cinnamon Rye muffins make the perfect grab and go afternoon snack or can be a great addition to a breakfast of fresh fruit and yogurt. Bake time is 15 to 20 minutes or until the tops of the muffins are golden in color.

Ingredients

  • 185 milliliters milk
  • 2 medium eggs
  • 100 grams butter (melted)
  • 190 grams agave syrup
  • 140 grams rye flour (white)
  • 160 grams whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon

Directions

  1. Preheat the oven to 210 degrees Celsius (or 190 C. for a convection oven).
  2. Mix together the milk, eggs, melted butter, and syrup.
  3. Separately, sift together the 2 flours, baking soda, baking powder, and cinnamon.
  4. Little by little, mix the dry ingredients into the wet ingredients until combined.
  5. Fill lined muffin tins with the batter and bake 15 to 20 minutes.
  6. Cool on a baking rack before serving.

I like to use blue agave syrup as a substitute for sugar since it is a natural sweetener and to avoid the sugar rush brought on by refined sugars. I was excited to find this recipe that calls for combining agave syrup with rye so I can see how the flavor profiles match up. I was not disappointed. The muffin was plenty sweet and the texture was spot on.
