Ingredients

  • 2 1/2 cups self raising flour
  • 1 teaspoon cinnamon
  • 1/2 cup firmly packed brown sugar
  • 1/2 cup raisins
  • 1 cup milk
  • 9 tablespoons melted butter
  • 1 egg (lightly beaten)

Directions

  1. Preheat oven to 400°F. Grease three 12-hole mini muffin pans.
  2. Combine flour, cinnamon, brown sugar and raisins in a large bowl. Stir in milk, melted butter and egg, do not over-mix (the batter should be coarse and slightly lumpy). Divide mixture into muffin pans, bake about 15 mins. Let muffins cool in the pan for 5 mins before turning, top-side up, onto wire racks to cool. Serve warm or cooled.

These are the worst muffins I have ever baked. Reminds me of floured rocks! Eww. The kind Eli Mea Clampett would throw at Jethro on The Beverly Hillbillies.
