Ingredients

1 cup cilantro (minced)
1/4 cup onions (diced)
1/8 cup sweetened coconut flakes
1 chile pepper (serrano, diced, may substitute jalapeno)
1 1/2 tablespoons olive oil
1 tablespoon fresh ginger (grated)
1 lemon
1 tablespoon water

Directions

1Place the cilantro, onion, coconut, serrano, olive oil, ginger, lemon juice and rind, and water in the blender to form a paste.
2Remove from blender, place into a glass dish, cover, and refrigerate.
