Ingredients

  • 1 cup cilantro (minced)
  • 1/4 cup onion (diced)
  • 1/8 cup sweetened shredded coconut
  • 1 chile pepper (serrano, diced, may substitute jalapeno)
  • 1 1/2 tablespoons olive oil
  • 1 tablespoon fresh ginger (grated)
  • 1 lemon
  • 1 tablespoon water

Directions

  1. Place the cilantro, onion, coconut, serrano, olive oil, ginger, lemon juice and rind, and water in the blender to form a paste.
  2. Remove from blender, place into a glass dish, cover, and refrigerate.

We love this chutney at our house. My husband loves to put it on flatbread with some meat or eat it with tortillas alone. It’s very versatile and can be used on just about anything. This one tends to be a bit on the spicy side. If you want it to have less heat then use less or none of the chili pepper.
