Directions
- Cover potatoes with water in 4-quart saucepot; bring to a boil over high heat. Reduce heat to low and simmer 15 minutes or until potatoes are tender. Drain and cool, then cut potatoes into bite-size pieces.
- Combine remaining ingredients except bacon in large bowl. Add potatoes and toss gently. Chill, if desired. Just before serving, sprinkle with bacon and garnish, if desired, with additional chopped fresh cilantro.
