  • 1 pound boneless country style pork ribs (cut into 3/4-inch cubes)
  • 1/2 pound smoked sausage (fully cooked, cut into 1/2-inch slices)
  • 1 cup onions (chopped)
  • 1 cup celery (chopped)
  • 2 cloves garlic (crushed)
  • 15 ounces black beans (rinsed and drained)
  • 15 ounces tomato sauce
  • 10 ounces diced tomatoes and green chilies
  • 1 cup beer (or water at room temperature)
  • 2 teaspoons chili powder
  • 1/2 teaspoon ground cumin
  • salt
  • pepper

Directions

  1. Place all ingredients in 4-quart slow cooker; mix gently. Cover and cook on low heat setting for 8-10 hours until pork is tender.
