500 grams whole milk
1 vanilla pods
25 grams butter
245 grams caster sugar
135 grams flour
40 grams egg yolks
1 whole eggs
10 grams rum


1Bring the milk, butter and vanilla bean (split into two lengthwise) to the boil in a saucepan. Remove vanilla, scraping the inside of the pod with the tip of a knife and adding the seeds to the milk mixture. Remove from the heat and add the flour and sugar in 3 additions. Whisk thoroughly. Add the egg, yolks, and rum. Mix.
2Cover the surface of the mixture with plastic wrap and refrigerate for 24 hours.
3The next day, preheat the oven to 360 ° F, mix again, fill the molds 3/4 full and bake 40-45 minutes depending on the size and desired color.
