There is something irresistably delicious about the light pairing of sweet and sour flavors. This recipe introduces a modest amount of lemon zest, sprinkled throughout the familiar, homemade taste of a sugar cookie. If time is of the essence, you'll be delighted to know that these buttery treats have an impressive baking time of just fifteen to twenty minutes. Try filling them with strawberry jam to add a sweet, summery twist to this already delicious recipe.

Ingredients

  • 110 grams butter
  • 130 grams sugar
  • 2 egg yolks
  • 1 lemon zest
  • 250 grams flour
  • strawberry jam (optional)

Directions

  1. Preheat oven to 180 degrees Celsius.
  2. Thoroughly mix the softened butter with the sugar until it's creamy.
  3. Add the egg yolks one at a time, stirring constantly, as well as the lemon zest.
  4. Add the flour gradually until you get a smooth and soft dough, knead lightly.
  5. Let rest for 10 to 15 minutes.
  6. Roll out the dough on a floured surface, and cut out cookies.
  7. Bake for 10 to 15 minutes, until lightly browned.
  8. When cool, decorate with powdered sugar.
  9. Fill with strawberry jam (optional).

I've baked lots of these 5 star christmas cookies and am doing more tomorrow. They are sort of sweet without being overboard. A semi-hard cookie that tastes even better when they are still warm.
