You can serve these up out of the oven, or fill them with your favorite filling for extra deliciousness.

Ingredients

  • 50 grams water
  • 50 grams whole milk
  • salt
  • granulated sugar
  • 45 grams butter
  • 55 grams flour
  • 2 eggs
  • salt
  • white sugar (Coarse)

Directions

  1. Preheat oven to 200 degrees Celsius.
  2. In a saucepan boil the water with the milk, a pinch of salt, a pinch of granulated sugar, and the butter.
  3. Add the flour all at once.
  4. Stir until the mixture comes away from the sides of the pan.
  5. Transfer the dough into the mixer bowl and let cool.
  6. Add the eggs one by one, stirring quickly between each to obtain a homogeneous dough.
  7. Use a pastry bag to pipe out the choux pastry on a baking sheet covered with parchment paper. Sprinkle with coarse sugar.
  8. Bake for 25 minutes.

This French pastry is supposed to be served as an afternoon snack, but I can eat it anytime day or night. It’s amazing and so light and fluffy. Try it with a chocolate drizzle to enhance the flavors.
