Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 1 clove garlic (crushed)
  • 1 1/3 pounds cod fillets (cut into cubes)
  • 2 red chili peppers (long, seeded and thickly sliced lengthwise)
  • 2 chorizo (sliced)

Directions

  1. Combine oil and garlic in a large bowl. Add fish and toss to coat. Cover and refrigerate for 30 mins to marinate.
  2. Heat a grill pan on high heat or preheat the grill to medium-high. Thread a cube of fish, a slice of chili pepper and a slice of chorizo onto each bamboo skewer. Brush with garlic marinade. Cook for 2 mins each side, until golden and cooked through.
