Description

Inspired by the traditional Portuguese Bola de Carne (bread with meat), this Chorizo and Fennel Loaf is full of savory flavor. An unleavened bread, this Chorizo and Fennel loaf does not require a rising agent. Made with olive oil instead of butter, this savory loaf is heart healthy. Spicy chorizo and fennel add a burst of flavor to each slice of this bread. Similar in texture to cornbread, this bread can be served as a tasty side or alongside a green salad.

Ingredients

  • 4 eggs
  • 4 tablespoons olive oil
  • 250 milliliters milk
  • salt (as needed)
  • 500 grams flour
  • 2 teaspoons baking powder
  • 1 teaspoon fennel seeds (ground)
  • 2 chorizo (chopped)

Directions

  1. 1Preheat oven to 200 degrees Celsius.
  2. 2In a blender or food processor, add the eggs one at a time, while beating them.
  3. 3Add the olive oil, milk, salt, and beat for a little longer.
  4. 4Add the flour, baking powder, and ground fennel seeds.
  5. 5Add the chorizo, and grind until well mix.
  6. 6Use a wooden spoon to place mixture in a greased and floured baking pan.
  7. 7Bake for 30 minutes.
