Description

These savory muffins make a great dish to make for brunch. Studded with chorizo and chives, these muffins are so full of flavor. At under 250 calories, these are a great option for a light breakfast when you are on the go. A touch of tumeric adds some added health benefits!

Ingredients

  • 1 teaspoon turmeric
  • Espelette Dukkah pepper
  • salt
  • 1 teaspoon baking powder
  • 125 grams melted butter
  • 2 eggs
  • 125 grams flour
  • 100 grams chorizo (diced)
  • 4 ounces cream cheese
  • 1/2 bunch chives
  • ground black pepper

Directions

  1. 1Preheat oven to 425 degrees Fahrenheit.
  2. 2In a bowl, mix the flour with the salt, turmeric, baking powder, and Espelette pepper.
  3. 3In another bowl, whisk the eggs with the butter.
  4. 4Make a well in the flour and pour in the egg and butter mixture. Mix well and then add the chorizo. Divide the dough into small molds or cupcake trays and bake for about 20 minutes.
  5. 5In a bowl, mash the cream cheese with a fork.
  6. 6Finely chop the chives and mix with the cream cheese. Add pepper to taste. Fill a pastry bag and decorate the top of the cupcakes once they have cooled.
