This chopped salad is super easy to make, requiring just 9 ingredients and only taking 30 minutes to prepare. Is it perfect to enjoy in the hot summer months when your garden is bursting with vegetables and it is too hot to cook. A simple dressing of olive oil, lemon, salt, and pepper are all the garden-fresh vegetables need. A crumbling of goat cheese and some fresh spinach are the last two ingredients needed to pull it all together for the perfect summer salad.

  • 1/4 cup onions (julienned)
  • 1 lemon
  • 2 tablespoons olive oil
  • 1 cucumber
  • 1 tomato
  • salt
  • ground black pepper
  • 1 cup spinach (washed)
  • 100 grams goat cheese (or feta cheese)

    Directions

    1. Place the chopped onion in a bowl and then add the lemon zest and lemon juice. Allow the onions to sit in the juice for 2 minutes.
    2. Peel the cucumber, remove the seeds and chop it and place into another bowl.
    3. Remove the seeds from the tomato and cut it into small cubes. Add it to the bowl with the cucumber.
    4. Add oil, and a pinch of salt and black pepper to the onions and mix well.
    5. Add the tomato, cucumber, spinach and cheese to the onions and mix well.
